RESUMEN

Deep Learning (DL) has proven to be a successful tool for many image classification problems but has yet to be applied to carcass images. The aim of this study was to train DL models to predict carcass cut yields and compare predictions to more standard machine learning (ML) methods. Three approaches were undertaken to predict the grouped carcass cut yields of Grilling cuts and Roasting cuts from a large dataset of 54,598 and 69,246 animals respectively. The approaches taken were (1) animal phenotypic data used as features for a range of ML algorithms, (2) carcass images used to train Convolutional Neural Networks, and (3) carcass dimensions measured directly from the carcass images, combined with the associated phenotypic data and used as feature data for ML algorithms. Results showed that DL models can be trained to predict carcass cuts yields but an approach that uses carcass dimensions in ML algorithms performs slightly better in absolute terms.

Genetic evaluations separate phenotypes into their contributing additive genetic effects and non-(additive) genetic effects, with the former termed best linear unbiased predictions, and the latter termed best linear unbiased estimates (BLUEs). For the purpose of the present study, genetic evaluations, along with phenotypic data from 4 137 376 animals, were used to generate herd, year of slaughter and sex contemporary group BLUEs for various slaughter-related traits. These slaughter traits included carcass weight (CW), carcass conformation (CC) and carcass fat (CF). For the 4 665 herds that were consistently slaughtering ≥10 animals/year between the years 2014 and 2018, inclusive, all relevant contemporary group BLUEs were collapsed into a single herd-year value; results herein relate to these herds. The within-year herd-year BLUE correlations between CW and CC, between CW and CF, and between CC and CF were 0.51, 0.10 and -0.04, respectively. The repeatability across years of the herd-year BLUEs for CW, CC and CF was 0.66, 0.59 and 0.50, respectively. Furthermore, when the herds were stratified, within year, on the percentile rank of their herd-year BLUEs, herds had the greatest probability of remaining in the same BLUE stratum from one year to the next. In addition, results from the present study determined that various herd characteristics are associated with differences in the herd BLUEs. Results from the present study could be used to advise beef producers on the most promising strategy to improve the carcass merit of their animals.

The objective of this study was to determine whether response to selection for carcass weight (CW), conformation (CC) and fat (CF), and the association between heterosis and carcass performance varied by herd environment in cattle. Following edits, carcass information was available for 4,616,761 cattle, of which the majority were some crossbred combination of the following breeds: Angus, Aubrac, Belgian Blue, Blonde d'Aquitaine, Charolais, Hereford, Holstein-Friesian, Jersey, Limousin, Saler, Shorthorn and Simmental. Herd environment was defined separately for each carcass trait using herd solutions outputted from carcass trait genetic evaluations. A total of 3,859 herds were stratified, for each trait, into one of five strata based on their corresponding percentile herd solution rank, with the response to selection and the effect of heterosis then estimated within each stratum. The response in CW and CC from selection on the respective estimated breeding values (EBV) increased between the lowest (0.71 kg and 0.89 CC score increase per unit increase in the respective EBV) and highest (0.99 kg and 1.25 CC score increase per unit increase in the respective EBV) corresponding herd stratum. The response in CF from selection on CF EBV, however, reduced between the lowest and highest CF herd stratum (respective increases of 0.93 and 0.83 CF scores per unit increase in CF EBV). In addition, the effect of a unit increase in heterosis coefficient on CW, CC and CF also varied by herd stratum. Furthermore, results (i.e. the area under relative operating characteristic curves) from the present study demonstrated that the response to selection and heterosis effects estimated for the different herd stratum can be used, along with EBVs and the herd solutions themselves, to improve the accuracy of phenotypic predictions. Results from the present study could help producers to make more informed breeding decisions that are bespoke to their herd.

Lean Meat Yield (LMY, %) of carcass is an important industry trait, which currently is not routinely measured in Australian beef abattoirs. Objective on-line technology to determine LMY is key for wider adoption. This paper presents a proof-of-concept approach for estimating the LMY of beef carcasses from the 3D information provided by RGB-D cameras. Moreover, a specifically designed on-line data acquisition system for abattoir applications is presented, consisting of three cameras moving on a scanning rig to generate 3D carcass side reconstructions. The hindquarter is then segmented consistently across all the 3D models to extract curvature information and LMY estimated via non-linear regression based on Gaussian Process models. Sides from 119 carcasses at two different commercial abattoirs were used to evaluate this approach. Results from this preliminary study (RMSE = 3.91%, R2 = 0.69) using curvature, P8 fat and HSCW indicate that 3D imaging of beef carcasses is a viable and relatively accurate technology to estimate LMY.

Image analysis could be an objective and rapid method to identify woody breast (WB) myopathy and benefit the global poultry industry. The objective of this study was to determine if there are conformational changes that can be used to detect WB characteristics in commercial broiler carcasses across strains, gender, and ages using image analysis. A total of 900 images of male and female broiler carcasses from commercial standard and high breast-yielding strains and 5 ages (6 through 10 wk) were captured before evisceration. These images were processed and analyzed using ImageJ software. Conformational measurements were M0: breast length; M1: breast width in the cranial region; M2: vertical line from the tip of keel to 1/5th of breast length; M3: breast width at the end of M2; M4: angle formed at the tip of keel and extending to outer points of M3; M5: area of the triangle formed by M3 and lines generated by M4; M6: area of the breast above M3; M7: M6 minus M5. Ratios of these measurements were also considered. Intact breast fillets were scored for WB severity based on tactile evaluation. Regardless of strain, sex, and age, M11 (M1/M0), M9 (M3/M2), and M4 had the highest correlation to WB score (rs ≥ 0.65; P < 0.01). Overall, the best validated model (Gen. R2 = 0.61) to predict WB included M1, M2, and M3. Using this model, 91% of broiler carcasses were properly classified as normal or WB along with a sensitivity of 71% to detect affected carcasses. Although the predictive performance of models for detecting the WB condition using these measurements was associated with the broiler strain, sex, and age or live weight, these data also support the feasibility of using image analysis to predict WB defect in broiler carcasses. The possible integration of these image measurements into commercial noncontact, nondestructive, and fast in-line vision grading systems would allow processors to identify broilers with WB and potentially sort, provide large-scale information downstream to further processing operations and upstream to live production.

Woody breast (WB) condition causes significant economic losses to the global poultry industry, and the lack of an objective and fast tool to identify this myopathy is a contributing factor. The aim of this study was to determine if there are broiler carcass conformation changes that can be used to identify WB characteristics using image analysis. Images of 8-wk-old male broiler carcasses (n = 544) of high breast-yielding strains were captured before evisceration, which were processed and analyzed using ImageJ software. Measurements were as follows: M0, breast length; M1, breast width in the cranial region; M2, one-fifth of the breast length starting at the tip of keel; M3, breast width at the end of M2; M4, angle formed at the tip of keel and extending to outer points of M3; M5, area of the triangle formed by M3 and lines generated by M4; M6, area of the breast above M3; and M7, M6 minus M5. Ratios of these measurements were also considered. Whole breast fillets were scored for WB severity based on tactile assessment and compression analysis to correlate them. Spearman's correlation coefficient (rs) between WB scores and compression force was highly significant (rs = 0.83, P < 0.01). Measurements M4 and M3 as well as ratios M9 (M3/M2) and M11 (M1/M0) had the highest correlation to the WB score (rs ≥ 0.70; P < 0.01) and compression force (rs ≥ 0.64; P < 0.01). The best validated model (generalized [Gen.] R2 = 0.60) to predict WB included M1, M2, and M3. Using this model, 84% of broiler carcasses were correctly classified as WB or normal with a sensitivity of 82% to detect affected samples. Alternatively, M4 and M6 as well as ratios M9 and M11 could be considered as predictors in different models (Gen. R2 ≥ 0.56). The same predictors were significant to estimate compression force (Gen. R2 ≥ 0.49). These data support the use of image analysis to predict WB condition in broiler carcasses. The potential integration of these image measurements into commercial in-line vision grading systems would allow processors to sort broiler carcasses by WB severity.

The U.S. Department of Agriculture (USDA) yield grade (YG) equation is used to predict the retail yield of beef carcasses, which facilitates a more accurate payment for cattle when they are sold on a grid pricing system that considers carcass composition instead of body weight alone. The current USDA YG equation was developed over 50 yr ago. Arguably, the population of cattle used to develop the YG equation is different than the current diverse U.S. beef cattle supply today. The objectives of this manuscript are to promote the adoption and use of precision agriculture technologies (i.e., camera grading and electronic animal identification) throughout the U.S. beef supply chain as a means to enhance the ability of the USDA YG equation to more accurately predict the retail yield across the population of cattle that contributes to the current U.S. beef supply. Camera grading has improved the accuracy of determining beef carcass retail yield; however, the use of electronic animal identification would allow for additional information to be passed back and forth between the packer, cattle feeder, and producer. Information, such as sex, genetics, medical treatment history, diets consumed, and growth promotant administration, as well as other information could be used to create additional variables for a new augmented USDA YG equation. Herein, fabrication yields demonstrated a 5.6 USDA YG and 12.8% boneless closely trimmed retail cut difference between actual cutout measurements and calculated values from the USDA YG equation for Jersey-influenced cattle. Evidence of such disparities between calculated and actual values warrants a reevaluation of the USDA YG system and consideration for implementing advancements in precision agriculture to improve the prediction of beef carcass retail yield to more accurately account for the large amount of variation in beef carcass retail yield from the cattle in the United States.

Beef carcasses in Europe are classified on measures of carcass weight, conformation, and fat cover. These measurements provide the basis for payment to producers, with financial penalties for carcasses that do not conform to desirable characteristics. The objective of the present study was to identify animal-level factors associated with the achievement of a desirable carcass weight, conformation score, fat score, and age at harvest, as stipulated by Irish beef processors in accordance with the EUROP carcass classification system. The stipulated specifications were a EUROP conformation score ≥O=, a carcass weight between 270 and 380 kg, a EUROP fat score between 2+ and 4=, and an age at harvest ≤ 30 mo. In the present study, 59% of cattle failed to achieve at least one of these desired specifications. The logit of the probability of achieving the desired specifications was estimated using multivariable logistic regression and carcass data from 4,717,989 cattle finished and harvested in Ireland between the years 2003 and 2017. In comparison to beef-origin carcasses and after accounting for breed differences, the likelihood of dairy-origin carcasses achieving the desired age, conformation, fat, and weight specifications was 0.97, 0.88, 1.14, and 1.05, respectively. In comparison to heifer carcasses, the odds ratio (OR) of bull and steer carcasses simultaneously achieving all of the desired specifications (i.e. the overall specification) was 0.35 and 0.95, respectively. Additionally, after accounting for breed differences, heifers from the dairy herd were half as likely as heifers from the beef herd to achieve the overall specification, whereas the odds of dairy-origin bulls (OR = 3.46) and steers (OR = 2.41) achieving the overall specification was greater than that of their respective beef-origin counterparts. Finally, cattle with a greater breed proportion of Angus were most likely to achieve the overall specification. Results from the present study could provide a deeper understanding as to why animals fail to achieve desirable carcass specifications and could be implemented into the management decisions made on farm to ensure that the supply of beef carcasses that achieve the desired metrics is maximized.

The objective of the present study was to estimate the genetic parameters associated with the achievement of desirable weight, conformation, and fat specifications, represented by a series of binary traits. The desired specifications were those stipulated by Irish beef processors, in accordance with the EUROP carcass grading system, and were represented by a carcass weight between 270 and 380 kg, a fat score between 2+ and 4= (between 6 and 11 on a 15-point scale), and a conformation score of O= or better (≥5 on a 15-point scale). Using data from 58,868 beef carcasses, variance components were estimated using linear mixed models for these binary traits, as well as their underlying continuous measures. Heritability estimates for the continuous traits ranged from 0.63 to 0.73; heritability estimates for the binary traits ranged from 0.05 to 0.19. An additional trait was defined to reflect if all desired carcass specifications were met. All genetic correlations between this trait and the individual contributing binary traits were positive (0.38 to 0.87), while all genetic correlations between this trait and the continuous carcass measures were negative (-0.87 to -0.07). The genetic parameters estimated in the present study signify that potential exists to breed cattle that more consistently achieve desirable carcass metrics at harvest.

Hanwoo cattle are an important food source in Korea and their supply can have a major impact on meat availability for Korean consumers. The Hanwoo population was 1.8 million head in 2005 and gradually increased to 2.6 million in 2015. Per capita beef consumption has also increased, to 11.6 kg per year in 2015, and is expected to continue to increase. Because intramuscular fat percentage is a critical contributor to meat quality, Hanwoo cattle are fed a high-energy corn-based diet for long fattening periods. Long fed diet causes significant alterations in fat percentage in the loin muscle and other areas of the carcass. However, these long feeding periods increase feeding costs and beef prices. Recently, there has been increased Korean consumer demand for lean beef which has less fat, but is tender and priced more reasonably. These consumer demands on the Korean beef industry are driving differing beef production systems and also changes to the beef grading methodology. Korean government has made a significant investment to select bulls with favorable production traits using progeny testing. Progeny tested bull semen has been disseminated to all Hanwoo farmers. A beef traceability system has been employed for all cattle breeds in Korea since 2009. Hanwoo cattle are ear-marked with a 12-digit identification number from birth to slaughter. This number allows traceability of the management history of individual cattle, and also provides information to consumers. Traceability including management information such as herd, farm, year of birth, and carcass data can determine estimated breeding values of Hanwoo. For a sustainable Hanwoo industry, research scientists in Korea have attempted to develop feeds for efficient fattening periods and precision feeding systems based on genetic information for Hanwoo cattle. These initiatives aim to Korean consumer demands for beef and provide more precision management in beef production in Korea.

This study investigated the effects of animal, carcass and muscle characteristics on initial color traits of steaks from 887 Charolais cattle. First, the fixed factors of year of birth, experiment and sex had strong impacts on color traits. From the covariates, increased age lead to intense color (low h*, -1.55 units) and darker and vivid meat (high a*, b* and C*: +4.56, +3.41 and +5.61, respectively). Increases in fatness score and carcass fat weight were associated with increases in a*, b* and C* (redness; +2.90 to +4.06 for a*; yellowness; +2.60 to +3.76 for b*; and vividness, +3.87 to +5.49 for C*) and a darker colored lean (L*; -1.56 to -3.23). As pH24h increased, a* (less red) and C* (less vivid) decreased (-3.06), whereas hue angle increased (+2.69) leading to poorer color. The selection of animals for high degree of muscularity or slaughter weight resulted in lighter and darker meat, respectively. The studied covariates could be used as indicators of Charolais beef color traits.

In order to improve foal carcass quality, it is necessary in particular to improve the carcass dressing percentage and tissue composition. Thus, it is important to establish relationships between grading systems and these parameters. This research was conducted to study the effect of slaughter age (13 v. 26 months) and finishing feed (standard v. linseed feed) on carcass characteristics such as subcutaneous fat colour plus classification of foals for the degree of fatness and conformation. For this study, 46 foals of crossbred genotype (Galician Mountain×Burguete) were used. Finishing feed did not affect any parameter, whereas slaughter age influenced all parameters (P<0.05). The oldest foals had higher carcass measurements, 13% more of meat, 4% more of bone, 12% more of fat, and 4% and 9% bigger fore- and hindquarter, respectively. Consequently, bigger valuable prime cuts were obtained. Nevertheless, the meat : bone ratio was very similar for both 13- and 26-month-old foals (2.88). Most of 26-month-old foals were classified in 'E' (Extra) and '5' (Complete fat cover) categories of conformation and degree of fatness. Most of the carcasses showed subcutaneous fat described as yellowish-white irrespective of age or diet. A regression model found that conformation (36%) and degree of fatness (33%) in live animals was positively linked with carcass tissue composition. It is therefore suggested that producers aim for older slaughter ages than 13 months and that the foal meat industry establishes grading systems to predict carcass quality. Further studies should be necessary to find the optimal slaughter age to obtain carcasses in the best categories of degree of fatness and conformation. New studies should be recommended to improve the meat : bone ratio of foal carcasses as it estimates the aptitude for meat production.

The prediction of carcass composition in Hanwoo steers is very important for value-based marketing, and the improvement of prediction accuracy and precision can be achieved through the analyses of independent variables using a prediction equation with a sufficient dataset. The present study was conducted to develop a prediction equation for Hanwoo carcass composition for which data was collected from 7,907 Hanwoo steers raised at a private farm in Gangwon Province, South Korea, and slaughtered in the period between January 2009 and September 2014. Carcass traits such as carcass weight (CWT), back fat thickness (BFT), eye-muscle area (EMA), and marbling score (MAR) were used as independent variables for the development of a prediction equation for carcass composition, such as retail cut weight and percentage (RC, and %RC, respectively), trimmed fat weight and percentage (FAT, and %FAT, respectively), and separated bone weight and percentage (BONE, and %BONE), and its feasibility for practical use was evaluated using the estimated retail yield percentage (ELP) currently used in Korea. The equations were functions of all the variables, and the significance was estimated via stepwise regression analyses. Further, the model equations were verified by means of the residual standard deviation and the coefficient of determination (R(2)) between the predicted and observed values. As the results of stepwise analyses, CWT was the most important single variable in the equation for RC and FAT, and BFT was the most important variable for the equation of %RC and %FAT. The precision and accuracy of three variable equation consisting CWT, BFT, and EMA were very similar to those of four variable equation that included all for independent variables (CWT, BFT, EMA, and MAR) in RC and FAT, while the three variable equations provided a more accurate prediction for %RC. Consequently, the three-variable equation might be more appropriate for practical use than the four-variable equation based on its easy and cost-effective measurement. However, a relatively high average difference for the ELP in absolute value implies a revision of the official equation may be required, although the current official equation for predicting RC with three variables is still valid.

Recent genetic improvement has developed pigs with maximum potential for protein deposit at higher weights; however, their optimal slaughter weight still needs to be determined. The objective of the study was to evaluate live performance, carcass traits, and economic viability of 417 Agroceres PIC pigs slaughtered with 100, 115, 130, and 145kg live weight. Pigs were reared in pens with 10-11 barrows and gilts each, offered a feed allowance of 2.8kg/pig/day until the following slaughter weights (SW): 99.65±0.82kg, 118.53±0.98kg, 133.97±1.17kg, and 143.90±1.24. There was no interaction between sex and SW (P>0.05). Backfat thickness, fat area, and loin eye area linearly increased with SW (P<0.001; R2: 70.12-77.44%), and carcass yield increased in a quadratic manner (P<0.001; R²=24.66%). Lean yield was not affected (P>0.05), and feed conversion ratio (R²=43.29%) linearly worsened with SW (P<0.001), but the effect of SW on live production cost (R$/kg) was quadratic, with the minimum point at 134.8kg. It was concluded that, under the applied management, increasing SW results in larger amount of lean tissue with no change in its yield and little effect on growth performance.


A evolução das linhagens sintéticas de suínos propiciou a obtenção de animais com potencial máximo de deposição proteica em pesos superiores; entretanto o peso ótimo de abate dessas linhagens não é conhecido. O objetivo do estudo foi avaliar o desempenho, características de carcaça e avaliação econômica de 417 suínos da linhagem Agroceres PIC abatidos com 100, 115, 130 e 145kg de peso vivo. Os suínos foram criados em baias com 10-11 machos ou fêmeas, com fornecimento programado de 2,8kg de ração por animal, por dia, a partir de 80kg até os pesos de abate (PA) de 99.65±0.82kg, 118.53±0.98kg, 133.97±1.17kg, e 143.90±1.24. Não houve interação entre sexo e PA (P>0,05). A espessura de toucinho, área de gordura e área de olho de lombo aumentaram linearmente com o PA (P<0,001; R² entre 70,12 e 77,44%), e o rendimento de carcaça aumentou de forma quadrática (P<0,001; R²=24,66%). A porcentagem de carne magra não foi afetada (P>0.05) e a conversão alimentar (R²=43,29%) apresentou discreta piora linear com o PA (P<0,001), mas o efeito sobre o custo de produção (R$/Kg) foi quadrático, com ponto de mínima aos 134,85kg. Conclui-se que, com o manejo utilizado, a elevação do PA resulta em aumento na quantidade de carne produzida sem alteração no seu rendimento e apresenta pouco efeito sobre o desempenho.

Background: litter provides comfort to animals while improving productive performance and carcass quality. Objective: this study evaluated broiler performance, incidence of contact dermatitis, and quality of poultry litter of wood shavings and/or sugarcane bagasse (SB) after five consecutive flocks. Methods: two thousand birds were raised in five consecutive flocks composed of 400 chicks each. The experiment was set in a completely randomized design with five treatments and four repetitions. The treatments consisted of substituting wood shavings with different levels of SB (0, 25, 50, 75, and 100%). Results: litter density, pH, dry matter content, total nitrogen, and phosphorus did not vary between treatments. However, substituting wood shavings with SB increased moisture retention capacity of the litter and ammonia production. Neither carcass lesions nor productive performance, with the exception of weight gain and feed conversion ratio in the fifth flock, differed between treatments. Conclusions: substituting 75% of wood shavings with SB maintained litter quality and improved poultry performance.


Antecedentes: la cama propicia el confort y mejora el desempeño productivo y la calidad de la canal de los pollos de engorde. Objetivo: el objetivo del presente estudio fue evaluar el desempeño productivo de pollos de engorde, la incidencia de dermatitis de contacto en la canal y la calidad de la cama de pollo compuesta de viruta de madera y/o bagazo de caña de azúcar (SB), usada en cinco lotes consecutivos. Métodos: dos mil aves fueron criadas en cinco lotes consecutivos, cada uno constituido por 400 pollitos, en un diseño completamente aleatorizado con cinco tratamientos y cuatro repeticiones. Los tratamientos consistieron en diferentes niveles de sustitución de viruta de madera con SB (0, 25, 50, 75 y 100%). Resultados: la densidad, pH y contenidos de materia seca, nitrógeno total y fósforo no variaron entre los tratamientos. Sin embargo, sustituir viruta de madera con SB aumentó la capacidad de retención de humedad y la cantidad de amoníaco volatilizado en el galpón. Ni las lesiones en la canal y ni el desempeño productivo, con excepción de la ganancia de peso y conversión alimentaria en el quinto lote, difirieron entre los tratamientos. Conclusiones: sustituir 75% de la viruta de madera con SB mantuvo la calidad de la cama y mejoró el desempeño productivo de las aves.

Objetivo: este estudo avaliou o desempenho produtivo de frangos de corte, a incidência de dermatite de contato na carcaça e a qualidade da cama de frango composta de maravalha e/ou bagaço de cana (SB), usada em cinco lotes consecutivos. Métodos: duas mil aves foram criadas em cinco lotes consecutivos, compostos de 400 pintinhos cada, em delineamento inteiramente casualizado com cinco tratamentos e quatro repetições. Os tratamentos consistiram de diferentes níveis de substituição de maravalha com BC (0, 25, 50, 75 e 100%). Resultados: densidade, pH e teores de matéria seca, nitrogênio total e fósforo não variaram entre os tratamentos. Entretanto, substituir maravalha com SB aumentou a capacidade de retenção de umidade e a quantidade de amônia volatilizada no galpão. Nem as lesões na carcaça e nem o desempenho produtivo, com exceção do ganho de peso e conversão alimentar no quinto lote, diferiram entre os tratamentos. Conclusões: substituir 75% da maravalha com SB manteve a qualidade da cama e melhorou o desempenho produtivo das aves.

RESUMEN

Meat quality and cut yield of pigs slaughtered between 100 and 150kg live weight were evaluated. Pigs (417 Agroceres PIC barrows and gilts) were fed a daily allowance of 2.8kg per head from 80kg until 100.71±0.85, 118.58±0.99, 134.07±1.18 or 143.90±1.24kg live weight. Seventy-one pigs were used for the evaluation of primal and subprimal cuts. There was no interaction between sex and slaughter weight for any of the evaluated parameters. Ham, shoulder, and loin weights linearly increased (P<0.01; R2: 84.3-93.2%) with increasing slaughter weight, which, however, had little effect on primal cuts meat yield. Increasing slaughter weight promoted a linear (P<0.05) and a quadratic (P<0.01) increase of red/green coordinate (a* value) of the loin and ham, respectively. Shear force showed a quadratic response (P<0.05), with minimum value estimated at 122kg slaughter weight. It was concluded that, under the applied management, increasing slaughter weight increased the volume of meat, but had little effect on meat yield. The meat of pigs slaughtered at heavier weights showed more intense red color and the same intramuscular fat content as lighter pigs, while tenderness was slightly affected.


Foi avaliada a qualidade da carne e os cortes de suínos abatidos entre 100 e 145kg de peso vivo. Os suínos (417 machos castrados e fêmeas, linhagem Agroceres PIC) foram mantidos sob fornecimento programado de 2,8kg de ração por animal por dia a partir de 80kg até o abate aos: 100,71±0,85, 118,58±0,99, 134,07±1,18 ou 143,90±1,24kg de peso vivo. Destes, 71 suínos foram usados para avaliação dos cortes primários e secundários. Não foi observada interação entre sexo e peso de abate em nenhuma das variáveis avaliadas. Os pesos do pernil, da paleta e do carré aumentaram linearmente (P<0,01; R2entre 84,3 e 93,2%) com o peso de abate, com pouco efeito sobre o rendimento da carne. A coordenada vermelho/verde (valor de a*) aumentou linearmente (P<0,05) no lombo e de forma quadrática (P<0,01) no pernil com o aumento do peso de abate. A força de cisalhamento apresentou resposta quadrática (P<0,05), com redução até o valor mínimo estimado para os 122kg de peso vivo. Conclui-se que, com o manejo utilizado neste estudo, a elevação do peso de abate resulta em aumento na quantidade de carne produzida, com pouco efeito sobre o rendimento de carne. A carne de suínos abatidos em pesos elevados apresenta cor vermelha mais intensa e mesmo nível de gordura intramuscular que a carne de suínos mais leves, enquanto a maciez é alterada apenas de maneira discreta.
